Ingredients

Beef oxtail croquettes     4 units
Pumpkin cream     25g
Pedro Ximenes 5g
Chives 2g

Preparation

- Heat the pumpkin cream.

- Reduce the Pedro Ximénez with a little sugar.

- Fry the croquettes.

- Place the pumpkin cream on the base of the plate and place the croquettes on top.

- Decorate with the PX reduction.
